Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup grated zucchini
  • ½ cup chopped pecans
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup pecan praline glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan.
  2. Whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, and salt in a mixing bowl.
  3. In a separate bowl, combine the eggs, grated zucchini, vegetable oil, and vanilla extract.
  4. Gradually fold the wet ingredients into the dry mixture until just combined.
  5. Stir in the chopped pecans, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
