A delightful Pesto Pasta Salad featuring vibrant basil pesto mixed with al dente pasta and colorful vegetables, perfect for warm weather gatherings.

Ingredients

  • 8 oz pasta (rotini, penne, or farfalle)
  • 1 cup basil pesto
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 2 cups spinach, chopped
  • Grated parmesan, for garnish
  • Pine nuts, for garnish
  • Fresh basil, for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water.
  2. Combine the cooled pasta with basil pesto in a large bowl, stirring until well coated.
  3. Add in the diced vegetables, mixing thoroughly.
  4. Chill the salad in the refrigerator for 30 minutes before serving.
