A delightful tropical dish featuring tender chicken breast in a tangy pineapple sauce, paired with fluffy rice.

Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks
  • 1 cup pineapple juice
  • 2 tablespoons soy sauce
  • 2 cups rice (white or brown)
  • 2 cups water or broth
  • 2 tablespoons cooking oil
  • Chopped green onions or cilantro for garnish
  • Optional: red pepper flakes for heat

Instructions

  1. Marinate the chicken with pineapple juice and soy sauce.
  2. Heat a skillet over medium-high heat, add oil, and sauté the marinated chicken until browned.
  3. Add diced pineapple and additional marinade, cooking until caramelized.
  4. Stir in uncooked rice, ensuring it’s well-coated.
  5. Add water or broth, cover, and let simmer until the rice is tender.
