A delightful, refreshing salad that combines the juicy sweetness of pineapple with the cool crunch of cucumbers.

Ingredients

  • 1 ripe pineapple, chopped
  • 2 cucumbers, chopped
  • 1 lime, juiced
  • 2 tbsp honey (or agave syrup for vegan)
  • 1 tsp sesame oil
  • Optional: red onion, herbs (for garnish)
  • Optional: diced jalapeƱos or chili flakes (for heat)
  • Optional: avocado, pumpkin seeds, sunflower seeds, feta cheese

Instructions

  1. Chop the pineapple and cucumbers into bite-sized pieces.
  2. Combine all chopped ingredients in a large bowl.
  3. Drizzle with lime juice, honey, and sesame oil.
  4. Toss gently to coat everything evenly.
  5. Taste and adjust seasonings, then let it chill in the fridge for 10-15 minutes.

Best served chilled. Store leftovers in an airtight container and consume within a couple of days.
