A classic creamy potato salad that is perfect for barbecues, picnics, or as a comforting side dish for any meal.

Ingredients

  • 2 pounds potatoes (Yukon Gold or red)
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley or dill
  • Salt and pepper to taste

Instructions

  1. Boil the diced potatoes in a large pot of water until fork-tender.
  2. Drain the potatoes and let them cool slightly.
  3. Whisk together the mayonnaise and mustard in a separate bowl.
  4. Combine the cooled potatoes with the dressing, mixing gently.
  5. Add the chopped vegetables and herbs, folding them into the potato mixture.
  6. Refrigerate the salad for at least 30 minutes before serving.
