A warm, comforting French toast casserole featuring soft bread and fresh blueberries enveloped in a rich custard, perfect for lazy weekends or brunch parties.

Ingredients

  • 1 loaf sturdy bread, cubed
  • 2 cups fresh blueberries (or frozen)
  • 4 large eggs
  • 2 cups milk (or dairy-free substitute)
  • 1 teaspoon vanilla extract
  • 1/4 cup sweetener (optional)
  • Powdered sugar, for serving
  • Maple syrup, for serving

Instructions

  1. Whisk together eggs, milk, vanilla, and sweetener in a bowl.
  2. Fold in cubed bread until well coated.
  3. Sprinkle fresh blueberries throughout the mixture.
  4. Transfer everything into a greased baking dish.
  5. Let it soak for a minimum of 30 minutes, or ideally overnight.
