Ingredients

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar or sweetener of choice
  • 1 teaspoon vanilla extract
  • Fresh strawberries, blueberries, and raspberries for topping

Instructions

  1. Prepare the graham cracker crust by crushing the crackers and mixing with melted butter.
  2. Press the mixture into the bottoms of your serving cups.
  3. Beat the cream cheese until fluffy.
  4. Add the sweetener and vanilla extract for flavor.
  5. Spoon the cheesecake mixture over the crusts in each cup.
  6. Chill the cheesecakes in the refrigerator for 2-3 hours until set.
  7. Top each mini cheesecake with fresh berries before serving.
