A quick and easy recipe for crunchy Refrigerator Pickles, perfect for snacking or enhancing meals.

Ingredients

  • 4 cups fresh cucumbers, sliced
  • 1 cup vinegar (white or apple cider)
  • 1 cup water
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon dill (fresh or dried)
  • 1 clove garlic (optional)
  • 1/2 teaspoon red pepper flakes (optional for heat)

Instructions

  1. Wash and slice the cucumbers to your preferred thickness; thinner slices will absorb the brine quicker.
  2. Combine vinegar, sugar, water, and spices in a saucepan, and bring it to a gentle simmer.
  3. Remove from heat after the sugar dissolves, and let it cool for a bit.
  4. Pour the brine over the sliced cucumbers in your jar, ensuring they are fully submerged.
  5. Seal the jar and give it a good shake, then allow it to chill in the fridge for at least a few hours, or overnight for the best flavor.
