A sweet, tangy spread made from fresh rhubarb, perfect for toast, muffins, or pancakes.

Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup sugar (adjust for sweetness)
  • 1 tablespoon lemon juice
  • Optional: spices like cinnamon or ginger

Instructions

  1. Wash and chop your rhubarb into small pieces.
  2. Combine it with sugar and lemon juice in a saucepan over medium heat.
  3. Cook until the rhubarb releases its juices and begins to soften, stirring occasionally (about 15-20 minutes).
  4. Blend with an immersion blender or transfer to a blender for a smoother texture.
  5. Cool the mixture thoroughly before storing in an airtight jar.
