A tender roast beef seasoned with rosemary and garlic, perfect for any family dinner or holiday feast.

Ingredients

  • 1 (3-4 lb) beef roast, well-marbled
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Remove the roast from the refrigerator about an hour before cooking.
  2. Preheat the oven to 350°F (175°C).
  3. Mix olive oil, minced garlic, chopped rosemary, salt, and pepper in a bowl.
  4. Rub the mixture all over the roast, ensuring even coverage.
  5. Heat a skillet over medium-high heat, then sear the roast on all sides until browned.
  6. Transfer the roast to a baking dish and roast in the preheated oven for about 20 minutes per pound.
  7. Check the internal temperature with a meat thermometer for desired doneness (130°F for medium-rare, 160°F for medium).
  8. Remove from the oven and let the roast rest for at least 15 minutes before slicing.
