A vibrant and nutritious salad bursting with flavors and textures, perfect for a quick meal.

Ingredients

  • 4 cups fresh greens (romaine or spinach)
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or canned)
  • 1 grilled chicken breast or 1 cup black beans
  • 1 avocado, sliced (optional)
  • 1/4 cup crumbled cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. Wash and chop your greens and vegetables into bite-sized pieces.
  2. Grill or sauté the protein until fully cooked, then slice it into strips.
  3. Combine the dressing ingredients in a bowl, whisk until smooth, and adjust seasoning.
  4. Place the greens in a large bowl, add veggies and protein, drizzle with dressing, and toss gently.
  5. Serve in large bowls, adding garnishes as desired.
