A delightful quick bread featuring juicy peach pieces, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup diced ripe peaches (fresh or canned)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the dry ingredients: flour, baking powder, cinnamon, and salt in a bowl.
  3. Combine the wet ingredients: eggs, oil, and mashed peaches in another bowl.
  4. Fold the dry mixture into the wet until just combined; avoid overmixing.
