A moist and tender zucchini bread with a hint of spice, perfect for breakfast or a cozy afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup grated zucchini
  • 1/2 cup vegetable oil
  • 1/2 cup walnuts (optional)
  • 2 large eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: flour, spices, baking soda, and salt in one bowl.
  3. Whisk the wet ingredients: brown sugar, oil, eggs, and vanilla in another bowl.
  4. Combine the wet and dry mixtures gently until just combined.
  5. Fold in grated zucchini and walnuts (if using).
  6. Pour the batter into a greased loaf pan.
  7. Bake for 45-50 minutes, or until a toothpick comes out clean.

Notes

Squeeze out excess moisture from zucchini for best results. You can also substitute nuts or add chocolate chips for variations.
