Deliciously sweet and creamy cheesecake bars perfect for spring gatherings and potlucks.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • Powdered sugar for garnish (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter in a bowl until crumbly.
  3. Press the mixture into the bottom of a baking dish to form the crust.
  4. Blend cream cheese and sugar until smooth.
  5. Add eggs, vanilla extract, and lemon zest, and blend until combined.
  6. Pour the cream cheese mixture over the crust.
  7. Top with fresh strawberries and blueberries.
  8. Bake for 25-30 minutes, until just set.
  9. Cool completely before cutting into squares.

Notes

For best texture, ensure cream cheese is at room temperature. Store leftovers in an airtight container in the refrigerator for up to 4-5 days.
