A delightful dish that harmonizes vibrant seasonal vegetables with al dente pasta, perfect for weeknight dinners or festive gatherings.

Ingredients

  • 8 ounces of pasta (gluten-free if desired)
  • 1 tablespoon olive oil
  • 1 cup asparagus, chopped
  • 1 cup peas
  • 1 cup bell peppers, sliced
  • Fresh herbs (basil, parsley, or thyme) to taste
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and add salt.
  2. Cook the pasta until al dente, about 8-10 minutes.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the asparagus, peas, and bell peppers; sauté for 5-7 minutes until tender.
  5. Drain the pasta and add it to the skillet with vegetables.
  6. Toss everything together with fresh herbs and seasonings.
  7. Cook for another minute, then serve.
