A delightful Spring Pea & Herb Pasta with Fresh Burrata, celebrating the vibrant flavors of the season. Perfect for light dinners or elegant lunches.

Ingredients

  • 8 oz pasta
  • 1 cup fresh peas
  • 2 tbsp olive oil
  • 1/2 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 8 oz burrata cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook pasta in salted boiling water until al dente, then drain and reserve some pasta water.
  2. Sauté fresh peas in olive oil until tender and vibrant.
  3. Add herbs to the peas just before tossing everything together with the pasta.
  4. If desired, add a bit of reserved pasta water for creaminess.
  5. Break the burrata over the top of the pasta before serving.

Notes

For different flavors, consider adding seasonal vegetables like asparagus or zucchini. For added protein, grilled chicken or shrimp can be included.
