A delightful pasta dish celebrating fresh spring vegetables, perfect for weeknight dinners.

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup asparagus, chopped
  • 1 cup peas
  • 1 bell pepper, chopped
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh herbs or grated parmesan for garnish

Instructions

  1. Boil water and cook the pasta until al dente.
  2. Heat olive oil in a pan over medium heat.
  3. Add the chopped vegetables and sauté until tender but crisp.
