A vibrant and refreshing pasta salad that captures the flavors of street corn, perfect for summer gatherings.

Ingredients

  • 8 ounces pasta
  • 2 cups corn, roasted
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted water until al dente, about 8-10 minutes.
  2. Roast the corn on high heat until slightly charred.
  3. Drain the pasta and let it cool slightly.
  4. Toss the pasta with the roasted corn, diced vegetables, and dressing.
  5. Season with salt and pepper to taste and mix well.
