A vibrant and refreshing salad inspired by Mexican street food, featuring charred corn, creamy dressing, and pasta.

Ingredients

  • 8 oz pasta
  • 2 cups corn, grilled or sautéed
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1/4 cup cilantro or parsley, chopped
  • Salt and pepper to taste
  • Optional: crumbled cheese for garnish

Instructions

  1. Cook pasta according to package directions until al dente.
  2. Grill or pan-sear the corn until charred.
  3. Drain the pasta and mix it with corn, herbs, and dressing in a large bowl.
  4. Adjust seasoning with additional lime juice and pepper as needed.
  5. Serve in a colorful bowl garnished with crumbled cheese if desired.
