A delightful and vibrant salad inspired by Mexican street food, blending sweet corn, creamy dressing, and fresh herbs.

Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 2 cups fresh corn (or frozen/canned)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/4 cup olive oil (or vegan mayonnaise)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted water until al dente, then drain and rinse under cold water.
  2. Sauté the fresh corn in a pan until just caramelized.
  3. Combine the cooked pasta and corn in a large bowl.
  4. Drizzle with the creamy dressing made from olive oil and lime juice.
