A vibrant and refreshing Vegan Pasta Salad packed with colorful veggies and a zesty dressing, perfect for picnics and potlucks.

Ingredients

  • 2 cups pasta of choice
  • 1 bell pepper, chopped
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried herbs (e.g. basil, oregano)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. Drain and rinse the pasta under cold water to stop the cooking process.
  3. Chop the vegetables into bite-sized pieces.
  4. Whisk together the olive oil, lemon juice, and herbs in a bowl.
  5. Combine the cooled pasta, chopped veggies, and dressing, tossing everything together until well coated.
  6. Serve chilled or at room temperature, garnished with fresh herbs.
