A delightful dish showcasing fresh zucchini filled with rich ricotta and herbs, perfect for a weekend family dinner.

Ingredients

  • 4 medium zucchini
  • 1 cup ricotta cheese
  • 1 egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1/4 cup fresh basil, chopped
  • 1/4 cup parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini thinly lengthwise.
  3. Drizzle the zucchini slices with olive oil and lay them out on a baking sheet.
  4. Mix the ricotta with the beaten egg, Parmesan, herbs, salt, and pepper.
  5. Spread a spoonful of the mixture on each zucchini slice and roll them up tightly.
  6. Place the rolls in a baking dish and cover with marinara sauce.
  7. Bake for 25-30 minutes until golden and bubbly.

Notes

Avoid slicing the zucchini too thick for better rolling and even cooking. Let the rolls rest if there’s excess moisture.
